1. TA Instruments Differential Scanning Calorimeter Discovery (DSC2500)
2. Texture analysis for low and high moisture meat analogues, and starch-based food products (texture analyzer and rheometer).
3. Water activity and water content of foods (water activity meter Aqualab, controlled moisture atmosphere, water holding capacity).
4. Phase mapping of proteins (several in-house techniques such protein solubility, SDS-PAGE, protein fractionation, size exclusion chromatography).
5. Plant protein conversion and texturization using a Brabender TwinLab F20/40 labscale twin-screw extruder or a Xplore MC 5 microcompounder
